Wonder Pies, founded in 2018 by chef Raymond Capaldi and his partner Jodi Crocker, is a Coburg North bakery (also supplying cafes, caterers and Flemington Racecourse) celebrated for pies engineered not to crumble, each built on a light shortcrust base with a crisp puff-pastry top. The Newlands Road outpost features a large viewing window onto the pie-making process, with around 15 fresh varieties available at any time — from classic braised beef mince and gravy to a lasagne version layered with pasta, wagyu mince and bechamel — plus sausage rolls, pasties, toasties, and sweets like Golden Gaytime doughnuts and salted caramel apple pies from their spin-off Nana Fraser's Bakery (they also run retail shops under the Baketico name). Upstairs, a custom mezzanine with an open kitchen and marble bar overlooks the production floor and hosts functions of up to 100 people, plus intimate private dining for up to 16, where Capaldi serves a rotating four-course menu featuring dishes like duck à l'orange pithiviers or kangaroo tail pies.
